After 10 weeks in Japan and over 50 bowls of ramen, he abura soba at tonikaku remains one of my favorites, beaten only by the Michelin Guide rated Tsuta. Stir, taste, and adjust. The noodles are dense and satisfying, and the addition of vinegar and oil gives them an irresistible tang. Enjoy half the bowl as just the noodles alone, then ask for soup to completely change the flavor profile of the dish. The soba immediately go from sour and wheaty to rich and savory. It is an absolutely delicious experience, and if you find yourself hungry in Matsudo this should be the first stop you make.
